Gnocchi Mac and Cheese

Like I mentioned earlier, I'm a recent believer in homemade mac and cheese. It's not that hard to make, and it tastes like crack. But try this on for size; homemade mac and cheese, hold the mac?

Welcome to the wonderful world of gnocchi. Gnocchi is an Italian pasta relative made of potato. It's the magic in Olive Garden's chicken and gnocchi soup. Now, you can hypothetically make it, if you're an Italian grandma. You can also buy it at Kroger if you're lame like me. It's super tasty, but I'd never come up with a good use for it until now.


Then I discovered the wonderful world of Pinterest. Pinterest it amazing, because it has things like this. Gnocchi mac and cheese.

There really was a recipe, I just decided to ignore it. I made it the same as Mama C's mac and cheese, just much smaller. A pound of gnocchi doesn't go nearly as far as a pound of pasta. In fact, I made waaaay less cheese than I usually do, and still had to add an extra box of gnocchi at the last minute.

I tried getting creative and added a little garlic and some spices, but quite frankly, I wish I had just stuck with the tried and true version.

Anyway, you want a real recipe, Noble Pig has one if you're a square like that. Recipes are for loosers. Just boil some gnocchi, and pretend it's pasta. Yum.
