Mom's Apple Crisp

Happy thanksgiving! Here's my (partial) list of what I'm thankful for this year, in no particular order.


1. I'm thankful for my mom's apple crisp


2. I'm thankful for Pampered chef's apple peeler corer slicer, which makes the most perfect apple slices
3. I'm thankful for granite counters, because I can screw the apple peeler corer slicer into them as tightly as I want and not hurt them. I mean, it's a chunk of rock!


4. I'm thankful for granny smith apples, the best for any baking in my opinion
5. I'm thankful for Costco, where I can get them in bulk
6.  I'm thankful for that Pampered Chef stoneware pan. Actually,
7. I'm thankful for Pampered Chef in general.


8. I'm thankful for my mommy (aww!)
9. More specifically, I'm thankful that she makes huge batches of apple crisp topping (minus the butter) and freezes it, so making thanksgiving dessert takes no time at all
10. I'm thankful for any dessert with a crumb topping
11. I'm thankful for butter
12. I'm thankful for microwaves
13. I'm thankful for desserts that bake in the microwave


14. I'm thankful for holidays that revolve around food
15. I'm thankful for that diet coke that I forgot to take out of the picture


Mom's Apple Crisp
From Pampered Chef

4-6 large granny smith apples
8 graham cracker squares
¾ cup brown sugar
½ cup oatmeal
½ cup flour
1 tsp cinnamon
½ cup melted butter

This recipe calls specifically for Pampered Chef's 11 inch stoneware pan. A regular pie pan will work, but you may have to reduce the number of apples.

Fill pan ¾ of the way with sliced, pealed apples. Finley chop graham crackers. Mix with sugar, oats, flour, and cinnamon. Add melted butter and mix well. Spoon mixture over apple slices. Microwave on high for 12-15 minutes, or until apples are tender, turning dish after 6 minutes. Cool slightly. Serve with vanilla ice cream.
